    Congratulations for getting to 213 that's fantastic news! The lasagna sounds delicious. How do you make it? Do you just slice the zucchini or do you peel it like you would for spaghetti? Also, when do you plant the Dahlia bulbs..spring or fall?

  • Aleka, I think Dahlia's are planted in the spring, that's when I planted them this year anyway. I even planted them a little on the late side and they still did great.
    The zucchini, I cut it into strips and then put it in boiling heavily salted water for a couple of minutes then let it drain very well. I've tried to make lasagna before without parboiling the zucchini and the lasagna turned out way too watery. I also put a layer of lightly sauted mushrooms and a layer of spinach in there, then mixed mozzarella, basil, 1 egg, parmesan and ricotta for the cheese layers, rounding it out with the usual suspects in the tomato sauce- italian spices, hamburger, salt and using Ragu for the base. I try to get as low a carb as possible, but it's not easily found. Next year, I'll grow more tomatoes and plan on making my own sauce. I should just use a plain tomato sauce and add my own ingredients rather than Ragu. Anyway, that's how I did it. I made a very large amount and froze it in 6 8x8 pans.
  • nikki, thank you so much for the recipe. I have found a spaghetti sauce, HUNTS, it's the light sauce, in a can, and there is no added sugar or fat. I honestly don't know how many carbs it has. It really is good. I doctor it up a bit adding red pepper flakes or other spices because it is rather blah. Thanks again for the recipe.
