Talking Low Carb Tasty Recipes & Links

Kirei has me so excited with all the wonderful LC recipes she's been offering us that I thought it would be nice to have a thread to post them on. I don't want ANY of them to get buried below!

So, this is what I thought might be nice and beneficial to not only us but the many lurkers and newbies enjoying this LC forum. A special thread to post tried, true and tasty LC recipes as well as our favorite LC recipe links.

The sad part is....all I can offer is the link back to our special 3fc LC recipe forum as I've only been scooping all those great ideas up from here! Put it in front of me and I'll cook it....Create it on my own....cannot do!

Please post your favorite LC recipe links here as well as your tasty LC recipes. BUT please don't forget to also put them at our LC recipe forum!

New recipe- Greek Stuffed Chicken...
Here is a chicken ecipe I made up today. I found some crumbled feta cheese at my commisary, and wanted to use it somehow. Here it goes.

Ingredients- (Serves 2)
*2 boneless skinless chicken breasts, thawed and fat trimmed
*2 ounces (or 3) cream cheese, soften in micro for approx. 30 seconds
*1-2 ounces crumbled feta cheese (sliced could work also?)
*1 garlic clove, minced
*6 strips of uncooked bacon (3 per chicken)

Directions-
1- Butterfly cut the chicken- slice a pocket along the side of the chicken, similar to the way a pita bread is sliced (It won't be perfect, but that's ok!)
2- After softening the cream cheese in a bowl, add garlic and feta cheese (and any other spices you fancy- I didn't add any)
3- Fill the pocket you cut in the chicken with the cheese mixture
4- Take whatever you will be baking this in (I use a Pampered Chef stone, but a baking dish will work) and lay the bacon strips so that they are touching side to side (only 3 per chicken)
5- Lay the stuffed chicken on top of the bacon strips, and fold over each of the bacon strips so that the ends of the bacon strips are meeting in the middle (or overlapping).
6- Bake in oven @ 375* for approx. 60 minutes.

This entire recipe is 2 servings
Carbs per serving= 3g
Carbs per entire recipe= 6g

Note- this would be delicious with my spinach casserole dish I posted on the recipe board.

Hope you enjoy! Let me know how you like it, or any improvements you make. Some may like more cheese stuffed in the chicken, so just add a bit more cream cheese, and slightly more feta. You don't need much feta cheese in this recipe because the cream cheese enriches the feta's flavor.

WOW!!!!! You have to try this!!!!!!
I saw this on another site, I twisted it a bit, and just tried it, and it is DELICIOUS!!!!!!

Chocolate Almond Brownie (1 serving)

Ingrediants-

2 ounces cream cheese
1 egg yolk
1/2- 1 t Atkins Vanilla Syrup
2 t cocoa (unsweetened)
1/2 ounce slivered almonds (optional)
4 packets of Equal

Directions-

1- In a small micro safe bowl, microwave cream cheese on high for 30 seconds.
2- With a fork, whip cream cheese until smooth. Add egg yolk and whip with fork until smooth.
3- Add rest of ingredients, and whip woth fork until mixed.
4- with a spoon, push down all mixture into center of bowl.
5- Cook in microwave for 60 seconds. Let cool enough to eat. Enjoy warm brownie!

10 carbs w/ almonds
7 carbs w/o almonds

LOWER carb Variation- Vanilla Cheese Danish

Same as above, but eliminate the cocoa powder and the almonds. Use only 2 equal packets, instead of 4.
(You can also use 4oz cream cheese, everything else the same, and 4 equal packets to make a thicker cheese danish @ 8 carbs)
4 carbs!!!!!!

Oh, that brownie was good! I think next time I will cook it in a wider bowl so it will be flatter and cook out better. Mine was still a teeny bit gooey in the middle, but still yum! It is better when it cools some. Don't be a pig like me and eat after 1 minute!

I used Sweet-N-Low. Didn't have any Equal and wasn't sure how much Splenda to use. Thanks!
