I'm pretty new to low carb -- 4 days new. What do you use in your smoothie? How do you make bluebird? What about cauliflower and cheese fauxtatoes? These all sound great!

Thanks!

Welcome Angie

I'm not sure but I think the fauxtatoes is when you cook cauliflower till it's very soft, mash it up and mix in butter , cheese and spices. It tastes alot like mashed potatos.

Here's mine (bear in mind that this is my last Free Day for awhile. Next week starts my 2 week FFP.

~throughout the day drink 64 oz of cranwater, hot water w/lemon juice and LLC twice today.

B~2 eggs scrambled with spinach, mushrooms and onions
S~10 bing cherries
L~salmon, brocolli and cauliflower w/ flax seed oil and lemon
S~Protein drink (1gm carb)
D~Mexican restraunt: steak and chicken fajitas. I won't eat the tortillas, rice or beans (DH can have them). But I will have a few tortilla chips/salsa and 1 margarita.
S~cherries or a nectarine

s- protein shake

d- take out chinese-ribs and some broccoli.

a salty day, so I'm guzzling tea and water!

I stuck with my menu, except I had fried chicken, batter/skin peeled off and green beans for lunch.

Sue, if I ate as much eggs, broccoli and cauliflower as you, I'd be left to sleep on the porch!

Hi Angie! Sil was right about the fauxtatoes. I boil cauliflower with a little vinegar (cuts that strong taste) until it is soft. Drain it and mash a bit in the colander to squeeze out the water. Put in a bowl and mash to the consistency of your choice ( I usually leave mine rice-like these days) and add you choice of cheddar cheese, butter, salt and pepper, bacon, sour cream, anything you would add to fancy mashed potatoes. It is really good! I don't have the recipe for bluebird handy, but you pound the chicken out flat. Mix to taste cream cheese (about 1 ounce per breast) with a bit of blue cheese (about a spoonful per breast) and spread the mixture on the chicken. Roll the breasts up and secure with toothpicks. Salt the chicken roll-ups and bake at 350 for about 45 minutes or until done. Tonite my husband made it and he put crumbled bacon in the cheese mixture. Wow, that was good!
