Baked Apple Custard Cups

Ingredients:
2 reduced-fat Nilla WafersŪ
1/3 cup finely shredded apples
1 Tbsp unsalted chopped pecans
2 Tbsp light cream cheese, softened
1 Tbsp fat-free sour cream
1 Tbsp Splenda
1/4 cup egg substitute
1/4 cup skim or 1% milk
1/4 tsp ground cinnamon
2 Tbsp thawed fat-free Cool Whip Whipped Topping

Preparation:

Preheat oven to 325°F. Coat two 6-oz. custard cups with cooking spray. Place 1 wafer in each cup. Combine apples and pecans; spoon evenly over wafers in cups. Set aside.
Beat cream cheese, sour cream and Splenda in small bowl until well blended. Add egg, milk and cinnamon; mix well. Pour evenly over apple mixture in cups. Place cups on baking sheet.
Bake 20 to 25 minutes or until center of each dessert is set. Cool slightly. Top each dessert with a dollop of the whipped topping just before serving.

Makes: 2 servings

Serving size: 1 cup

This is very good. It is not a sweet custard at all. I heated some up and put some cinnamon, brown sugar splenda and vanilla on top and it was superb.
