1 to 1 ½ lbs lean ground beef sirloin, at least 90 to 95% lean, size according to plan (or 1 ¼ to 1 ¾ lbs lean ground turkey breast)
1 medium apple, peeled, cored, and chopped
1 medium onion, chopped
1/8 tsp pepper
1/2 tsp garlic powder
2 slices white bread
2 tbsp apple juice
Preparation:
In a bowl, combine ground beef, chopped apple, chopped onion, pepper, and garlic powder.
Sprinkle white bread slices with apple juice, shred, and add to the beef mixture.
Form in a loaf pan and bake at 375 degrees F (190 degrees C) 25 to 30 minutes.
1/2 cup skim milk

1/2 cup chopped red bell pepper
1/2 cup egg substitute, lightly beaten
2 teaspoons Worcestershire sauce
1/4 cup ketchup, no added salt
1/2 teaspoon Morton Lite Salt®
Freshly ground black pepper
1 (8-ounce) can tomato sauce, no added salt
Preparation:
Preheat the oven to 350 degrees F.
In a small bowl, stir together the oats and milk. Thinly slice 1/4 of the onion and set aside. Finely chop the remaining onion.
In a large bowl combine the turkey, oat mixture, chopped onion, bell pepper, eggs, Worcestershire sauce, ketchup, salt and a few grinds of pepper. Mix just until well combined.
Transfer the mixture to a 9 by 13-inch baking dish and shape into a loaf about 5 inches wide and 2 1/2 inches high. Pour the tomato sauce over the meatloaf and sprinkle with the sliced onions.
Bake for about 1 hour, or until an internal temperature of 160 degrees F.
Remove from the oven and let rest for 10 to 15 minutes before slicing.

Mix together beef, salt, pepper, onion, bell pepper, egg substitute, tomatoes, and oats. Shape into a loaf. Place in a baking dish.
Mix together ketchup, sugar, and mustard. Spread on loaf.
Bake in oven for 1 hour.

Recipe Name: Stuffed Meatloaf
Ingredients:
1 small onion, grated
3 garlic cloves, minced
1/4 cup chopped fresh Italian parsley leaves
1/2 cup egg substitute
1/4 cup ketchup
1 tsp Morton Lite Salt
3/4 tsp ground black pepper
2/3 cup fresh bread crumbs
1 cup grated Parmesan cheese
1 1/2 lbs lean ground turkey breast
2 cups lower-sodium stuffing mix
1/2 cup marinara sauce
3/4 cup shredded, reduced-fat cheese, such as provolone or mozzarella
Preparation:
Preheat oven to 350.
Whisk the first 7 ingredients in a large bowl to blend. Stir in Parmesan and bread crumbs. Mix in the turkey breast. Pack half the meat mixture into a 9 x 5 loaf pan. Spoon stuffing mixture over the meat in the pan, leaving a 1 inch border around the edges. Top with remaining meat mixture, enclosing the stuffing completely and pressing firmly. Spoon marinara sauce over the meatloaf (my husband preferred this with ketchup, not marinara sauce), and then sprinkle with the provolone.
Bake, uncovered, until the meat loaf is firm to the touch in the center and has pulled away from the sides of the pan, about 45 minutes.
Cut into 8 thick slices and serve.

1 tbsp lemon juice
2 egg whites or ¼ cup egg substitute

Sauce:
¾ cup low-sodium ketchup
2 tsp honey
2 tsp lemon juice
2 tsp Worcestershire sauce
½ tsp chili powder, or as desired
Preparation:
Preheat oven to 350 degrees F.
In a large bowl, combine vegetables, meat, spices, and all other ingredients, through the 1 tsp Morton Lite Salt.
Shape into a loaf pan that has been coated with nonfat cooking spray. Bake for 20 to 25 minutes.
Meanwhile, combine ingredients for the sauce in a small bowl. Remove loaf from oven and brush with 2 tbsp sauce. Bake for another 20 to 25 minutes. Let cool 10 minutes before slicing. Serve with additional sauce on the side.
Eleanor- I have personally not made any of these recipes. I have made one similar to to the turkey one that uses oats only with beef and I added cheese and mushrooms to it. But here is a selection for you to choose from.
Thank you so much for the recipes...I am going to try the one that calls for beef. I try to make meals that hopefully the whole family likes....while making it easier preparing one meal as opposed to two.
