Vegetable Medley

  • VEGETABLE MEDLEY
    Serves 4

    1 tablespoon margarine of your choice
    2 medium yellow summer squash, sliced
    1 medium zucchini, sliced
    1 medium yellow onion, diced
    3 medium fresh tomatoes, diced
    1/2 cup frozen corn
    1 clove garlic, minced
    1/2 teaspoon oregano
    1/2 teaspoon basil
    1/4 teaspoon freshly ground black pepper

    In a large pan over medium heat, melt margarine. Add squash, zucchini and onion. Saute 3 to 4 minutes.
    Add tomatoes, corn, garlic and seasonings and cook another 2 to 3 minutes.
    Serve immediately.
