Post Green Chile'

This recipe calls for pork, but I've made it with turkey, chicken, pork loin and beef.

1/2 - 1lb Pork Loin (see note above) cubed into small pieces.
10.5 oz. Low sodium chicken broth
1 onion - finely chopped
1/4-1/2 tsp garlic powder
1 can (7 oz) diced green chilies
1/4 jalepeno, finely chopped (I use a couple but we like the heat)
Lite salt to taste
Cumin to taste. (this will add some heat also)
1 TBSP flour dissolved in water
Lo Carb tortillas

Toppings - RF or NF and within you plan
lettuce, shredded
tomato
sour cream
cheddar cheese

Simmer meat in broth on low for 10 minutes. Add all other ingredients except flour and simmer 45 minutes. Thicken with flour so it is like a thick soup. Sppon about 1/4 cup into center of flour tortilla. Roll up tortilla and top with more green chile. Top as you like.
This freezes really well. I portion it into containers and freeze for use on tortillas, brown rice, even on taco salad.
We like anything that's spicy, so this is a great dish for us.
I can't give you the "specifics" on it. Sorry.
