Whats for Dinner?
 
I'm always in search of new ideas.

I'm having baked salmon with vegetable "fried" rice. I sautee chopped bell peppers & grated carrots in a tiny bit of oil with seasonings to taste then add cooked rice and a bit of lite soy sauce. I also add onion & garlic but not alot.

Lastnight i tried something new. I made spinach and turkey meatballs and had it with whole wheat spaghetti and sauce. So good and its a good way to get some turkey in and a veggie.

What are you all having for dinner tonight?

My Fav is chicken breast cooked in Hot sauce. I use franks red hot sauce buffalo. Yum! It is sooo good. Then Celery on the side like hot wings and a little light ranch! It is the Best and my DBF likes it too!

Chicken fajitas. chicken breasts, onions and bell peppers sliced and cooked with chili powder and salsa. The table top grill works great for this. Served with FF beans, lettuce, tomatoes, LF cheese, salsa. No tortilla for me but the family can have tortillas and sour cream.

Baked potatoes w/butter spray and FF sour cream, grilled pork chops, steamed spinach, carrots. And wine.....3 oz with some sprite zero.

Amy- It was just a frozen bag that I added a few tablespoons of water to, brought to a boil, turned down to low, put a lid on, and let steam for about 10 minutes. My mom makes amazing rasberry and peach vinegars that I love to eat on spinach.

I threw a pork roast in the crock pot, will have steamed cauliflower, peas and a salad with FF ranch dressing. Hopefully there will be some leftovers for dinner later in the week.

Hamburgers! OK lean ground beef on LC bread but they were good! I added lots of veggies and BBQ sauce. Plus broccoli.

Baked Chicken with spaghetti sauce
Ingredients:
1/4 cup spaghetti sauce
boneless skinless chicken breast according to plan portion size
1 oz shredded part-skim mozzarella cheese
Preparation
Preheat oven to 375 F. Place aluminum foil on bottom of baking dish. Add chicken; Cover chicken with sauce, turn over to evenly coat both sides with sauce. Cover with foil.
Bake 30 minutes. Uncover.
Top with mozzarella cheese and continue baking 5 minutes or until chicken is cooked through and cheese is melted.
1 Protein, 1 Vegetable, 1/2 Dairy

Served with oven grilled asparagus and mushrooms.

Tonight I made turkey burger meat loaf. I throw 1 lb of turkey burger, 1 onion, a big handful of baby carrots, an egg, and some zuchinni into the food processor and blend together, then bake on 400 for about an hour. It is so good, my kids absolutely devour it. Also baked potatoes and sliced tomatoes.

Tonight I just finished my last Italian chicken breast that I did in the slowcooker on sunday. Ate it for the last few days but that helps for me for work or coming home to an easy supper. With that I had steamed mixed non-starchy veggies. Sprinkle a little real parmesan on the top (and I mean a little) and I was good to go.

tonight i had a pretty heavy dinner, a treat for us. I did pork chops on the george foreman and mashed potatoes with mushroom and onion sauce. Sauteed onions & mush with a little sprinkle of flour and about 3/4 cup low sodium chicken broth & of course seasonings to taste.

I had turkey breast with a little bbq sauce on it, 1/4 C mashed potatoes and a huge salad. Later I had 1/2C ice cream. Tonight is up for grabs. I'll check this thread for some ideas.

tonight is homemade rotisserie chicken with green beans, onion and tomatoes. sautee onions then add green beans and tomatoes, add about 1/2 cup low sodium chicken stock (i make mine with water and the low sodium cubes) & simmer for about 8 mins. I also add a little salt & pepper. its so good, DH & I really enjoy this and have it atleast once a week and the boys love the chicken legs.

I tried the chicken with hot sauce, celery and ranch. It was great! Anytime I feel like wings, this is what I'm going to make. Now that I'm on the new plans hot sauce is unlimited! Thanks for the great ideas! Every week when I sit down to plan the meals for the week I always have this website up for ideas.

i dont really follow a recipe for this one but i'm going to try and type a recipe for it.

2 servings

2 tsp oil
salt
pepper
1 herbox low sodium chicken bouillon
1 tsp garlic powder
dash oregano (skip if you dont like oregano)
handfull chopped onions, about 1/2 a medium onion
2 tsp garlic minced or chopped
1 1/2 tbls each curry powder & garam masala (you can use less if you're not a huge curry fan)
1lb chopped chicken breast (or whatever your plan allows)
about 1 1/2 cups water
2 tomatoes chopped (you can skip tomatoes if you want)

Chop chicken and season with salt & pepper (to taste, you can add more after chicken is cooked if needed), 1 herbox low sodium chicken bouillon, 1 tsp garlic powder (skip this if 2tsp minced garlic is enough for you) & dash of oregano.

Heat oil on med high heat, add onion & garlic. Sautee for about 30secs then add curry powder & garam masala. Stir together and cook for another 30secs. Add seasoned chicken & stir to combine, add water (add enough water to boil chicken which would be right before chicken is covered and if you want to add more for extra broth you can).

Cook chicken for about 15mins or until cook thru (at this point if there is too much broth for you still left in the pot you can cook a bit longer to let the water evaporate) and then add tomatoes. Cook for another 5 minutes or until the tomatoes are how you would want them and its done.

serve over rice.

I count this as 1P, 1V & 1S. Since i add carrots to my rice i get in another V.

I made chicken marsala from the recipe threads the other night. It was soooo good. My DH and kids ate it up as fast as they could go. I will try to find it and post the recipe.

Chicken Marsala
1 P, 2 V

6 oz or 8 oz boneless skinless chicken breast
1 C fresh mushrooms
5 green onions sliced
2 T water
1/8 t Morton lite salt
1/4 C dry Marsala or cooking sherry

With meat mallet, pound chicken to 1/4 inch thickness.

spray skillet with Pam. Preheat over medium heat. Add chicken and cook until tender and no longer pink. Remove chicken and keep warm.

Add mushrooms, green onion, water, and salt to skillet. Cook until mushrooms are tender and most of the liuid has evaporated. Add Marsala or cooking sherry to skillet. Heat through.

Serve chicken topped with vegetables.

****I served the veggies and saucey stuff over angel hair pasta, and added a big bowl of steamed italian veggies.

I made Kristen's Cheesey Beef and Broccoli from the recipe threads. It was awesome. I served it with brown rice and a tomato cucumber salad. Really good.

I tried a recipe from Quick Fix Meals w/ Robin Miller on Food Network

Personal Penne Primavera

1 pound penne pasta (I used half a box of whole wheat pasta)
1 tablespoon olive oil
1/2 cup chopped red onion
3 to 4 cloves garlic, minced (I used 5)
2 cups broccoli florets
1 cup sliced carrots
1 cup sliced mushrooms
2 cooked chicken breast halves, diced (about 2 cups)
1 cup diced roasted red peppers (from a jar)
1 (14-ounce) can diced tomatoes (low salt)
1 cup reduced-sodium chicken broth
1/2 cup frozen green peas, thawed
Salt and freshly ground black pepper
1/3 cup grated Parmesan
1/4 cup freshly chopped basil leaves

Cook penne according to package directions. Drain and set aside.
In a large skillet, heat oil over medium-high heat. Add onion and garlic and cook 3 minutes, until soft. Add broccoli, carrots and mushrooms and cook 3 minutes, until mushrooms soften. Add chicken, red peppers, tomatoes, and broth and bring to a simmer. Stir in penne and peas cook 2 minutes to heat through and season, to taste, with salt and black pepper. Transfer mixture to a serving plate and top with Parmesan and basil.


*I used frozen veggies- broccoli, califlower and carrots. I nixed the peas and mushrooms. I cooked the chicken at 400 for 30 minutes (sprinkled salt/papper and olive oil first)

This was WAY better than I thought it would be! The extra garlic gave it a nice kick. I counted 1/6 of recipe as 2S, 3V, 1/2P C Fa- I added more chicken to my serving to give me a full P.
