  • Dawn, I made mine with Vanilla, after licking the spoon when I was mixing it, I decided to mix in a package of Splenda before I ate it. Maybe it wasnt sweet enough???
  • I think that it could use more pumpkin pie spice and I also agree the serving size is too big. Could be 4 servings or 6? Only problem then is figuring out what it counts as.

    Actually, next time I make it I am going to try using Dannon lite and lively vanilla yogurt instead of the skim evaporated milk. I had some digestive issues with the evaporated milk.

    I will report back on the results of the yogurt trial.

  • O.K. I went to the Grocery Store yesterday all ready to get my pumpkin pudding stuff and guess what. The only pumpkin I could find was the pumpking pie filling. Since the second ingredient listed was corn syrup I figured it was not OP.
  • You are right, Amy. It needs to be just pumpkin.

    Thank you for the recipe Lynn. I made this today and it's really good. I used the one ounce sf vanilla pudding (not the larger 1.5 ounce size), added 1 tsp cinnamon and 1/4 tsp nutmeg instead of the pie spice (that's what I had in the pantry) and added six Splenda packets. This made three 8 oz servings...now that's a great way to get a veggie in!
  • This is my new best friend! LOL It gets rid of the sweet craving, I guess for me its considered a legal sweet treat!!! I made it the second time with Cheesecake pudding, YUM! Pumpkin cheesecake! I'm making some to take to my dads for Thanksgiving!
  • I made it again and this time I used 2 cups of dannon lite and lively low fat vanilla yogurt instead of the skim evaporated milk. I can't taste the difference. I divided into 4 servings about 3/4 cup each and I am counting it as 1/2 D and 1/2 V.

  • I just have to say this, even though I am not on LAWL, I just had to try it. I love it and so do my kids. It's a great way to get some veggies in them, especially when all they want to eat is cereal, mac & cheese and pb&j...
  • I finally found the pumpkin puree and I am definately going to try this soon. I am doing a TO today so I have to wait. I am going to try the white chocolate pudding in mine. I can't wait! Thanks again Lynn. I may fix this a a dessert for T-Day.
  • O.K. I made this this a.m. before going to work. Yes I have been obsessing about it and I love it. I made a double recipe w/ cheesecake puddding cause I couldn't find a small can of pumpkin. I also added 1/2 c splenda and it is delicious. I only brought about a cup with me and I am wanting more, guess its a good thing I didn't bring more. )
