Tropical Chicken Pasta Salad
Ingredients:
* 4 oz. radiatore pasta (small nuggets)
* 8 oz. reduced fat reduced sodium smoked deli chicken, cubed
(about 1 3/4 cups), such as Healthy Choice(r)
* 2/3 cup unsweetened tropical dried fruit bits
* 1/2 cup thinly sliced celery
* 1/2 cup dry-roasted un salted macadamia nuts or whole almonds
* 1/2 cup sliced green onions
* 5 Tbsp. fat free poppy seed dressing
Preparation:
* Cook pasta in large pot of boiling unsalted water according to
package directions. Drain; rinse under cold water to cool.
* Meanwhile, in large bowl, stir together chicken, dried fruit,
celery, nuts and green onions. Add pasta.
* Pour dressing over salad; toss to coat well.
Makes: 5 servings
