Slow Cooker Tuscan Beef Stew
Ingredients:
* 2 pounds lean beef for stew, cut into 1 inch pieces
* 1 (14 1/2 ounce) can diced Italian style tomatoes, no salt added
* 1 (10 3/4) can low sodium tomato soup
* 1 (10 1/2 ounce) can reduced sodium beef broth
* 1/2 c water
* 3 large carrots, cut into 1 inch pieces
* 1 t Italian seasoning
* 1/2 t garlic powder
* 2 (16 ounce) cans light kidney beans, drained
Preparation:
* Mix beef, tomatoes, tomato soup, beef broth, water, carrots, Italian seasoning and garlic powder in a 3 1/2 quart slow cooker.
* Cover and cook on low for 8 to 9 hours, or turn on high 4 to 5 hours. Stir in beans.
* Turn heat to high and cook for 10 minutes.
