Cool Bread crumbs

Hi,

Does anyone have a recipe for bread crumbs or can I use the stuff in a can? I was making eggplant parm.

If you don't have it I would suggest getting the current version of the cookbook at the LAWL centres.. It is wonderful and well worth the value.
Their breadcrumb recipe in the book is for 6 servings, each serving being 1/3 cup each.. I use storebought bread crumbs often and you want to try to get whole wheat variety.. serving size again is 1/3 of a cup.. I've made the Eggplant Parm from the book and it is wonderful and often requested by family.

To make your own use 6 slices light bread toasted to remove moisture and cool. Crumble toast or use food processor.. Add 1/4 tsp lite salt, 1/2 tsp of onion powder and 1/2 tsp of garlic powder, 1/4 tsp of oregano and 1/4 tsp of basil. I mix up the seasonings depending on what I'm making.
