Default Veggie Help

My husband and I are doing the program together, but he is struggling with the veggies. He seriously doesn't like many vegetables or salad - his favorites are green peas & corn (of course that is a starch) and spinach. He needs variety. Any thoughts? Of course, salad is out as well.

Have you tried to roast some veggies in the oven?

What about V8 juice?

I myself do not like vegetables so I usually try to make meals that get more than one in at a time.

I'm searching around for this recipe called a Chicken-Vegetable loaf, it's a protein and two starches and actually tastes great.

I found this recipe in LA At Home last night and it looks good-

Nutritional Value
1 Protein
3 Vegetable


Ingredients
4 or 6 oz chuck roast, size according to plan
2 cups Herb-Ox® very low-sodium beef broth, prepared from bouillon
1/2 medium carrot, thinly sliced
1/2 large rib of celery, sliced
1/2 cup fresh green beans, trimmed and cut into 1/2 inch pieces
1 small tomato, seeded and diced

Rinse roast and pat dry; cut into 1 inch pieces. Season with pepper.
Coat a Dutch oven with nonfat cooking spray. Add beef and cook over a medium flame until lightly browned.
Add beef broth; bring to boil.
Add remaining ingredients to pot. Return soup to a boil.
Reduce heat; cover and simmer until beef and vegetables are tender, approximately 20 minutes.
Serve immediately or store in refrigerator up to 24 hours.

Serving size : Makes 1 Serving


I find that if you are eating the veggies as part of a meal it makes them much easier to get down.

You know-I never used to like veggies-mostly because I thought they took too much time to fix.
couple of tips-I keep cherry or grape tomatoes on hand, slice them in half and cook them into my scrambled eggbeaters nearly every morning. You could add spinach, peppers or mushrooms too. A great way to get in 1 or 2 servings in at breakfast.

All the new bags of frozen veggies that you just pop into the microwave come out really flavorful. Some have added seasonings or oil. You can just count it as a condiment or fat, depending on what it is.

Stir frys have saved my life

When you go out, do you go out for mexican, italian, chinese, indian, japanese...? Maybe taking some of his "likes" and making them "lites" will get him more enthused!
Let me know, I'll try and come up with some recipes for ya!
As for us, I use soups, casseroles, stir frys, and many cooking variations on the veggies we love...

I'm hoping Donisha will chip in here...she made some of the LAWL Turkey Chili last night and brought some in to work this morning for me to try. It was really good, and it counts as 1 protein and THREE veggies per serving!

Mmm. I'm SO making that for my family next week!

I was having problems getting in my 4 veggies a day also. I talked to my COD and she talked to the nurtionist and the bumped me down to 2 veggies and an extra .5 dairy. So maybe it would be worth asking if there something else he can do besides all the veggies.

I don't like many veggies either.. The only two I really eat are broccoli and snap peas have you tried those? I just love those two! I also like carrots but dh doesn't so I don't cook them too often :P

Thanks for the ideas and hidden veggies seem to be the best way to go. We'll try those in the egg beaters and some of those recipes as well and I'll keep watching for me. Favorite food is Mexican - enchilada, rice & beans was our usual and or steak/potato

I don't really like a lot of vegetables either and I got tired of the ones I do like really fast. Try the kale chips recipe that I posted. I believe it's in the snacks/appetizers section?? It may sound a little crazy at first, but trust me--it really is good! Especially if you like potato chips. Hope this helps!
