Personal Challenge
I challenge myself to eat one salad either as a meal or as a part of a meal.
Every day for 21 days consecutively. Back to day one if I miss a day. Starting 4/20/06 til 5/10/06 SAlad with dinner- 4/20 day one done Spinach and red leaf lettuce and carrots w/ poppy seed low fat dressing |
Tammy, I'd like to join you on this one if you don't mind. I do much better if I eat at least one salad a day I think.

Vicki welcome aboard. I got my water habit accomplished with the personal challenge so here we go with vegetables. I picked salads because I actually like them alot. I usually only eat them once a week or sometimes even once every two weeks. I only eat vegetables about one maybe two servings a day to sometimes every other day. Here we go!

Last night I had romaine lettuce, baby spinach, tomato, cucumber, mushrooms with a little bit of shredded Mexican cheese and a little bit of ranch dressing. Yesterday I also had spinach, tomatoes, onions, mushrooms and bell peppers in my omelet. |
What a GREAT personal challenge!!!!! Very doable too! Good luck!!

Saturday had a salad with my steak and sweet potato.
Didn't have one Sunday, so have to start again tonight. |
I had a side salad with dinner yesterday and one with lunch...my biggest problem is taking the time out the night before to make one up for lunch. I can't eat two salads in one day though cause I get really stopped up...
Tomorrow I am planning one as my meal for my lunch.. |

Susan I'm here I have been so very busy. Looking for full time work. I finally got something today. I should be starting in about a week. I can get back on track as well. I have still been doing well with water but salads could be better. I have been incorporating a lot more veggies in my meals tho. I have been eating lots of mushrooms spinach tomatoes and onions. I will be starting at dai one again tomorrow. 5/2 til 5/23.I can do this. I will do this.

Susan You are doing great. Okay I restart my 21 days today. Lets race who will finish first. Are we staying on track or will we need to go back?

I bought two bags of lettuce, a bunch of tomatoes, a cucumber, some red bell pepper and I'm not going to throw it away because it goes bad. So, we are doing this together to the finish.

I have a side salad everyday that I have a lean cuizine for lunch at work. ( almost everyday) it weighs @ 8 oz...and has that lettuce mix with a little bit of red cabbage and carrots, then I put on 2 cherry tomatoes, a spoon of shredded cheese (lean cuizines don't have enough protien usually) 4 or 5 thin slices of red onion, 2 slices cuccumber and a spoon of croutons (can't seem to break that habit!) I figure it isn't more than 150 calories (I hope)cause that is usually the amount of calories lacking from the frozen meal. I have really become dependant to these meals...cause of the convience. Otherwise I know I will eat way too much!
p.s. I try to do that fork thingy with the dressing too. |

I think I am tired I just wrote this but I must have poked the wrong button because it is gone. I blew it today and will need to start over again. I will need a few days to get the whole thing straight, Got so busy I forgot to eat until about 3 pm today. I even messed up on my water intake today, only had about 3 16 oz glasses. I have not done that in a while. I will really need to stay on top of this.

I ended up with salad for dinner last night instead of lunch and a salad (well really a veggie plate) for lunch today.

so does a salad plate of red pepper, cuccumber, and carrots count? I wasn't sure...a salad minus the lettuce! I had that yesterday with dinner. Today I had a salad and chicken soup for lunch

Really tho salads do not have to have lettuce, we are doing veggie salads all kinds. Except of course potato salad. You are doing great. Way better than I am. This new job has thrown it all off for me. But I will settle in and then watch out salad habit here I come. |
Hey Tammy -- I'm sitting here with a big bowl of romaine lettuce, cucumber, tomato and a sprinkle of Mexican cheese blend with ranch.
I had the same thing for dinner last night. So I've now done 11 days in a row! |
Salad sounds really good and you are doing great. I'll get there, I know I will but I am so proud of you and that will help me remember this weekend to stock up on my salad stuff and take them to work next week. Thank you so much Susan for always being here.You truly do help me remember my quest for a healthier body and state of mind.

I did have a pile of veggies for breakfast - mushrooms, spinach, onions, artichokes, tomatoes, red/green bell peppers. But I ate popcorn for dinner! |
Well how bout this for guilt you got me motivated enough to have a veggie sub at subway on friday. I went in and had them pile it high with all sorts of veggies. Lettuce onions tomatoes peppers olives pickles, no cheese no meat, on a whole wheat small bread roll. So day one done 5/12!

Good girl! I had lettuce and tomato on my tostada for breakfast. I'm having gluten-free veggie pizza for dinner and I'll have the salad bar too.
