I think it's awesome that you're vegan!
It's less awesome that your veganism seems to include a lot of refined carbs.

All you really need to do to lose weight, I think, is switch from sugar to sweetener, white bread to wheat bread to less bread, vegan pizza to vegan pizza on a cauliflower pizza crust (look it up, srsly). Also, run now and then.
When I gave up meat & cheese, I immediately lost eight pounds without trying. I then gained it back as soon as I started carb-loading on dry cereal, bagels-with-peanut-butter, and vegan cookies.
