Default How do we cook desserts within IP rules?Recipes welcome

I am 2 and a half weeks into IP, survived the new year bash without breaking any rules. We have an indian festival ( I am Asian Indian) coming up Jan 15th, its a harvest festival with a lot of cultural significance.called "Sankranti" ..would like to make something sweet for the ceremony. Usually we make sweet porridge out of rice , jaggery and milk.

This time I am planning to substitute zucchini for the rice, Walden farms maple syrup for the jaggery, and water for the milk. ( unless Soymilk or Almond milk are allowed on diet phase one??? ), measuring everything along so I am not using more than specified quantities.

I was looking for any tips and advice, how do you deal with making desserts for those special days , keeping the protocol? Any vegetarian recipes are most welcome too....

BTW...I made my first egg and veggie frittata today, thanks to some recipe posts by forum members!! Hubby loved it...thanks!

Here is a beautiful one that you can adapt:- assorted puddings. Just have to be aware of how many packets you use and portion them out correctly.

The other one I made and really liked was the pseudo key lime pie using an oatmeal packet and a vanilla pudding. Recipe . you'll need to scroll down the page, as it's almost at the bottom.

Unfortunately no almond or soy milk on Phase 1, but there are plenty of desserts that can be made with the pudding and oatmeal packets!

Thank you, Scorbett - that reminds me I've been wanting to try sweet fauxtato pie!

Don't forget rhubarb - many things you can do with rhubarb and a little sweetener. Rhubarb crumble using some IP compliant oatmeal as topping ... Also, you can buy it frozen and keep it handy for dessert emergencies!

Yes!! I always forget about the rhubarb because it can be so hard to find.

I made LizRR's Sweet Fauxtato pie for my dessert at Thanksgiving and actually had family members try to sneak bites of it out of my dish!! It was very yummy and I didn't feel like a beached whale afterward

Thank you so much gals,......will go through the recipe links you posted....and find what is closest to the one I want...thanks again.

Lisa, sorry, I should have checked the chat thread first...guess was in too much of a hurry to know if its possible....looks like most of us have tried desserts so I should be able to follow the path!
