I have some going in the oven now. :). I was too scared of stepping away from comfort zone. So here I go... I used a bag of frozen cauliflower, cooked in micro 4 min, riced it, spread on cookie sheet lined with parchment paper. Used a square of it to press it out. Sprinkled with sea salt and pepper and a few with taco seasoning that was previously made before for Spanish "rice" I do. Wish me luck :D

sdhinds -- did you try again and succeed? Have grated my cauliflower and now am trying to figure out how best to proceed. Am quickly scanning past posts on all these threads to determine best practices!

I tried this last night, and my family was amazed. Used as a tortilla for a soft taco. I will adjust recipe next time I try, because it was a little too eggy for my taste (tasted like an omelette). Used 4 cups raw cauliflower florets and 2 eggs and spices. Will reduce to 1 egg or maybe 2 egg whites next time.
Editing to add more details: I had a 32 oz. bag of cauliflower florets that I bought from Costco (not frozen). It was about 8 cups total raw. Super easy to grate with just a few pulses in food processor. Used half to try tortillas and will use remaining half in next day or two as rice. For the tortillas, after grating, I microwaved for about 3 minutes. Did not squeeze out water, though maybe i will next time, to get them thinner. I spread into circles on a Silpat (no sticking!) on my cookie sheet. Cooked on 400 for about 10 minutes, then flipped for another 5. Then browned them up even more in nonstick on stovetop. 4 cups raw made about 3 cups grated "rice" and then about 8 tortillas. |
I didn't retry. Had no more cauliflower left. It did however form a bit more the longer it sat (why it cooled). I did not use egg. I will the next time. Good job mimi :)
