BTW those Italian Shepherd Pies freeze so well!! I make individual servings of them and then put them in Food Saver bags and take out of the freezer on days I don't feel like cooking or running late. Taste so great!

It's like you were reading my mind - I'm looking for recipes that freeze well that I can make ahead and take to the beach with me for a 2 week vacation.

Anything IP you have made that you know freezes and reheats well? I'm wondering if you have ever made and frozen the potato rolls or bread and if they are ok that way.

First let me say that you totally rock on your weight loss! 115 lbs!!! Woot woot!

I haven't ever premade or freezed the IP foods or alternatives only because they don't seem as resilient to the freezing process and also because it just doesn't take too long to prepare.

Amberjules - Thank you for some delicious looking recipes! From Big Mac in a bowl to Shepherd's pie - -and probably beyond. Do you have any suggestions for what to do with eggplant?

For eggplant I usually cut the eggplant thin into "chips" and then coat with olive oil and salt and pepper then bake on 350 until browning and a little crispy on the edges. You'll want to put this on a baking sheet.

It's very easy and time consuming. I'll make a recipe on this one soon!

Hey amber: I trashed my kitchen all on my own today! I made yogurt, started naturally fermented sauerkraut, shredded caulirice to freeze, and shredded a bunch of zucchini. Plus I'm preparing to make mockamole for me and real guac for others. If the kitchen is gonna be a mess, might as well only clean it once!

Im going to make the Italian Shepherds pie tomorrow and was wondering, if you are freezing some, do you still cook it then freeze it, or just throw it in the freezer after assembling. I work long hours next week and have to bring my dinner with me. Have you microwaved these before?

Next time I'll do it this way! I didn't check back in time, but went ahead trying to modify a Paleo diet recipe to fit IP standards, and would up with a gooey mess that has too much garlic in it. The cooking urge was so strong and I wanted to move the eggplant out of the fridge.
Can't quite face doing another one today, but this sounds right - simple and quick and easy to handle. Thanks!

How to make cauliflower rice?
 
I missed this somewhere, or maybe it's just so obvious that no recipe is needed? Anyway I'd love any information on how to make this. Sometimes you just need a starch-like food with that meat and veg.

I grate a head of raw cauliflower on a cheese grater then steam in a microwave for 3 minutes, super easy!

I don't cook it in the oven before I freeze it just because I have to heat it anyways after freezing so this way it doesn't dry out from cooking and then freezing and then reheating again.

I have definitely pulled it out of the freezer and just microwaved it. It's not my favorite method, but it certainly works.

Rhubarb Crisp
Ingredients:
6 cups frozen rhubarb
2 tsp cinnamon
3 tsp pure vanilla
13 packs of Stevia in the Raw
dash of salt
Ideal Protein Maple Oatmeal (or alternative Oatmeal pack)
1 oz of water
I Can't Believe It's Not Butter spray

Love your recipes they are so yummy. Also I love your pretty dishes. Where do you shop for them?

Thank you! I get most of my dishes at World Market (you can go online and signup for their newsletter to get coupons) or Crate and Barrel. World Market is my fav though. Cheaper and more unique items.
