Question Problems making IP chocolate pancake

Have any of you had trouble making the IP chocolate pancake? My mom and I both have tried to make it and followed the directions for how to cook it on the stove into a pancake. Neither of ours came out. I noticed that when mixing it with water it wouldn't dissolve and had some chunks in it, even if I mixed a long time. Also, when I cooked it, it seemed to start to burn on the outside but the inside never fully cooked. Every time I would try to flip it it would fall apart and more goo would seep out. It ended up just being a pile of bits and pieces and goo that did not taste or look good and I threw it out.

Has anyone had problems making this? Are the results better if it's made as a muffin instead?

LOL, sounds like the one time I made this! I ate it anyway, but next time I'm going to add less water and prepare my pan better. I didn't use a non stick pan which I will next time. Good luck!

It needs to be cooked at a much lower heat than you would usually cook pancakes - slower & longer.

I make my muffins from pudding mixes (pancakes too). They turn out good. There is also a good recipe for crispy cereal pancakes. I don't make them b/c I'm soy/gluten-free.

I am having the same problem with the Chocolate Pancakes - I'll try lower heat for longer. But how do you make a muffin out of them?! That sounds yummy!

I posted the recipe in this thread. It's not my recipe but I made some changes. The same batter can make muffins or a pancake (cook the pancake slower)

I have had the same problem with making the pancakes with the IP chocolate pancake mix so I use the crispy cereal packet and those always come out great.

Thanks so much! Glad we are not the only ones who couldn't figure this out. Next time I'll try the low, slow heating and the muffins. I do like the crispy cereal as pancakes too so if anything I can just stick with those.
