I was wondering if pico de gallo is good to eat for Phase 1?

Just read the label and make sure there's no sugar or anything you don't recognize. If its just tomatoes, onion, peppers and other things you can have on the program, just count it as part of your daily veggies. I usually
Look for the fresh stuff in the produce section.

It's always safer to make your own, then you know exactly what's in it! This is a very easy recipe:

I loooove getting the fresh salsa in my local produce section!! So good. Make sure there's no sugar. Mine has tomato, onion, cucumber, cilantro, pepper, lime juice, and a few other ingredients that are allowed. I count it as my restricted veggie and load up. It's great on lettuce tacos, omelettes, on top of chicken, sauteed...

I make my own pico de gallo all the time and I also use the same recipe but boil the tomatoes and jalapeno pepper then put it into a blender with the garlic, onion, cilantro, & salt then eat it like a soup. I usually add shrimp or chicken. Yummy. Very Very Yummy. I usually save my restricted veggies twice a week just for this recipe.

chicago girl YOU ROCK!!! that sounds like the best soup when everybody wants mexican and I cannot, no I refuse to eat the stuff that they are eating!

Thank you! Try it you won't be sorry! I have to credit my mother in law, she taught me to make it years ago. When I figured out it was IP Friendly it was an awesome day!
