So it's our Thanksgiving today here in B.C and I have been freaking out all week. Today a break through with Rutabaga! Didn't think this would be possible but I tried it and it came out awesome! I so wanted pumpkin pie or sweet potato pie but this is going to really hit the spot! I took 1 whole large rutabaga, peeled and cubed. I boiled it in about 1 cup of water with some vanilla and splenda. I also added whole allspice. Once soft, I drained the liquid and kept it aside, pureed the rutabaga and added back to the stove. I added more splenda and to the reserve liquid, 1 vanilla drink mix. Stir to combine and add your favorite pumpkin spice mix. I used cinnamon, all spice, ground ginger and nutmeg. I added a pinch of sea salt to round out the flavors. If I had some IP marshmallow dip. The result was a thick, pud-dingy consistency that made the whole house smell amazing. Thanksgiving dinner will included 2 roast chickens (were not fans of Turkey) 1 for hubby w/skin and my own w/o skin and rubbed in yellow mustard, splenda, salt, black pepper and rosemary. I stuck 1/2 lemon, an onion and more rose marry in the cavities. I also have roasted Brussel sprouts, cranberry sauce (made with splenda, orange zest and spices), cauliflower steaks and IP stuffing
