Cauliflower Pancakes!
 
This is most likely on this forum somewhere but worth a post!
Made these yesterday morning....AWESOME! Very "custardy" and french toast-like in flavor yet look like a pancake and you can flip them like a pancake!

Take your raw cauliflower and chop it into "rice"...I use food processor and it comes out very fine grained.

In a bowl: beat 1 whole egg, 1 egg white, 1/2 tsp vanilla, 1 tsp splenda, and cinnamon to taste.

Now take a tablespoon heaped with cauliflower and add it in. Mix. repeat till you have added 4 tbsp. Mixture should look like batter. If still looks thin to you add more cauliflower but do not over thicken.

In fry pan add in oil...heat on medium...add in batter. It will even bubble like a real pancake. Fry...flip...fry...edges get crispy...cook like a pancake!

Plate it...spray with butter spray (zero cal)...add WF pancake syrup...and enjoy!

You can make 2 sizable pancakes with the above recipe.

This really kicked my pancake hunger!

Its simply amazing what you can do with cauliflower. Until last week I had never ever heard of cauliflower rice. Now I've made cauliflower rice crust for pizza and last night I made Mexican cauliflower rice (which turned out great). In my wildest imagination I never thought you could make it into pancakes! I would make them this morning, except that I don't have any low calorie pancake syrup on hand. I've read that the Walden Farms brand is pretty good. I'll have to pick some up so I can try this recipe!

I went to the store looking for the WF syrup, and they don't have it here, so I ordered some from Netrition. Once it comes in, I'm trying this out. :)

What was in your Mexican Cauliflower Rice? Please share. I love Mexican food. Thank you!

This looks great! But, I'm going to try them without the sweetner and add seasonings. I'm looking for more savory recipes rather than sweet ones. These will be so easy to take to work for lunch and warm up in the microwave quickly.

I estimated about 1/2 cup. I didn't quite use the 4TBSP of riced cauliflower.

Add-- I started out with about 1 cup of cauliflower and once I riced it, I added not quite 4 TBSP to my pancake batter. i also had about 1/4 cup left over.

Hi All: Thanks for the wonderful comments!
Serving size:I did cut up Cauliflower (like 1" pieces)and measure out about 2.5 cups. THEN I took those 2.5 cups and threw them into my food processor and turned them into "rice"...then back to the measuring up. It was 2 cups almost almost exactly.

So I figure on just using it as 1.25 cup regular equals a 1 cup "riced".
Close enough for me anyway!
I did not measure out the riced cauliflower I added for the pancakes yet but when I make them again, I will and post it here! Maybe tonight with my dinner! LOVE these!

I definitely plan to make this! I too find it amazing what you can do with cauliflower. As the weather cools down, I'm looking forward to making Cauliflower Clam Chowder soup in my slow cooker. It's delicious!

Starshine... just keep in mind that I am not on the idea protein diet, so I don't know if that recipe conforms with that particular diet.

I checked out the recipe - other than the salsa (which could be substituted with regular chopped tomato or homemade salsa made without sugar) and the sautee'd onions (which would likely caramelize them) it looks on point for IP! Very easy to adjust and make it fit the IP requirements!

We'd also have to skip the yogurt on top, at least until after Phase 1 :)

So the first time I made the cauliflower pancakes, I did the cauliflower raw and the bits were still kind of crisp even after cooking them (I probably cooked the pancake too fast, but I'm impatient!). So this morning I had some leftover cauli rice, which had been heated in the microwave and was a little tender. I used that, and it was much softer in the pancake! Perfection!

OK, so just made the pancakes for breakfast...YUM!
Measured the cauliflower "rice" which is more like couscous...it is 3/4 cup. 1 whole egg, 1 egg white (I use extra large eggs)....skipped the splenda, added 1 tsp vanilla and several dashes cinnamon...mix, add to hot oil...fried on medium high and let them cook. Spray with no cal butter spray and add WF syrup.
Totally acceptable! Delish!
Note: That is a large full size dinner plate.

You're welcome. You may have to play around with the measurements some because I really didn't follow a recipe either time I made it. I only wrote down the recipe (the best I could) after I made it. The first time I made it, I didn't use a whole head of cauliflower, and the 1 cup of broth was fine. The second time I made it I used the rest of the large head of cauliflower and needed two cups of broth. So, you might need to use a little more broth, spices, etc.

the protein equivalent of 8oz protein is 4 eggs + 2 egg whites (there is an updated phase 1 sheet from May of this year in the Newbie thread, posted by Wuv who is a coach). You can have 2 egg whites per day as a "freebie". so I have just counted the cauliflower as 1 cup of my veggies for the day.

I use 3/4 cup cauli rice so I count as 1 cup veggie
It is 1 whole egg...approx 70 cal...I skip the shake and call it even
I use 1 egg white: freebie
Oil: I use canola oil for this...and count it as my days oil requirement

I then have 1 cup veggie for lunch with a shake and save 2 cups veggie for dinner. I steam those veggies as I have already used my daily oil.

This unfortunately isn't an Ideal Protein compliant recipe - we can't have dairy of any kind (cream or butter) and bacon is not recommended. Ideal protein limits fats unlike Atkins, this recipe sounds more Atkins-friendly.

Yes! It's just veggie and eggs, nothing that's not allowed on phase 1. I count them as 1 cup veggie (1 cup cauliflower makes about 3/4 cup riced when I do it in my food processor) and 2oz protein.

I had the pancakes for dinner last night...OMG so good! Also had 2 whole eggs omelet with some veggies...it was breakfast for dinner! Awesome! These pancakes are my new favorite food!
