Gingersnaps?

Okay, keeping in a cookie theme, I'm really missing gingersnaps. I was thinking I'd try the following -- any suggestions on what else I might do? Not sure how to replace the molassas color/flavor appropriately.

- 1 Vanilla drink mix
- 1 egg white
- 1/4 tsp cinnamon
- 1 tsp ground ginger
- 1 tsp baking powder
spash vanilla
1 packet of Splenda

Bake 20 mins (or more?) at 350

20 minutes? Yes! Yes! I guess I made a mistake with that one. OOPS! When I made mine this morning, I flipped them after 10 and cooked them for another 10. Hope this helps. Mmmmmmm!

And by the way, I don't care who gets the credit for the recipe. As long as we put the yummy in our tummy. haha

I just made these for breakfast and enjoyed the naughty feeling of cookies for breakfast. however, I made them according to instructions using a cocomint pudding mix and baked only 10 minutes total as mine were baking quickly. They tasted flat and I'm not totally surprised since I wasn't so fond of the cocomint pudding. As I have a box, thought how great if these worked out well, so I began experimenting with toppings.

Tried warmed WF choc syrup dripped on it: somewhat chemical tasting
Tried WF caramel syrup: better than the chocolate syrup, not a knock out
Tried coconut oil w/ Truvia sprinkled on top: pretty good
Tried choc syrup w/ Truvia: pretty good
Tried choc syrup, caramel syrup w/ Truvia: very good

Despite how it sounds, the cookies weren't dripping in syrup - used thin coatings and just a light sprinkling of Truvia.

This is definitely a recipe with lots of potential for fun experimentation. Thank you all for your ideas!

These cookies sound great! Do any of you know if the Pure Protien Powder could subsitute for the Choc Drink mix?
Thank you

NNNNOOOOO!!! Don't do it!! See my posting earlier about needing WD40 to get those babies to slide down. Pure Protein powder is what I used and they were the driest things I've ever (not) eaten. I threw out 3 batches trying to make them edible.

The IP pack ones are SOooo good. HOWEVER, I'm going to keep playing with the Pure Protein to see if I can make something palatable. If you DON'T have IP shakes, then go for it (you won't know the difference) but don't give up if the first batch is gross. There's gotta be a way to use that stuff as it's just so much cheaper! :?:
