Talking Ice box Gumbo

Ok you probably think I am nuts but here goes.

I have been craving gumbo so last night I decided to make one with the stuff left in my ice box from the week.

I started with chicken broth added celery and bell pepper that I chopped in the blender. Added shredded chicken breast, mushrooms, frozen okra, and a can of green beans, salt, pepper, basil, Italian seasoning, basil, Mrs. dash, and red pepper flakes. Tasted it and was missing that little bit of tomato taste so I found some salsa in the ice box and threw that in.

Now it may sound terrible BUT...surprisingly it was AWESOME!

Hubby liked it so much he said to make it more often.

Sounds good to me!! I would like to make a seafood gumbo sometime soon.

YUMMM!!!! I may have to try this! I made a 'mock tortilla soup' kind of the same way, had a bunch of leftover fajita stuff - peppers, cilantro, chicken, pico de gallo - threw it all on with some chicken broth and it turned out to be a good soup!
