I wasn't really that fond of the miracle noodles the couple of times I tried them. It was probably my recipe - should try again.
However - I tried the Banana Pudding 'tapioca' recipe that is on here somewhere - it uses a banana pudding packet & a packet of miracle rice. I really enjoyed that. Maybe because I like tapioca, and it did feel somewhat like I was eating chewy tapioca.

Matter of fact, I may have that for tonight's snack.
Ingredients:
Banana Pudding packet (other pudding flavors will work too)
Package of Miracle Rice
Cinnamon (optional)
Poppy seeds (optional)
Stevia (or whatever IP plan appropriate sweetener you are going to use)
Vanilla extract - a dash
2/3 cup of hot water for mixing up the pudding
Sea salt for the water for boiling the Miracle Rice.
Instructions:
Open package of Miracle Rice and rinse well in cold water.
Blanch/boil in fresh hot salted water for 1 minute. Can leave in the hot water until ready to use if you want your pudding hot.
Make the Banana Pudding - 2/3 cup of hot water is about right.
Add cinnamon, poppy seeds, stevia, vanilla.
Drain the 'tapioca' (Miracle Rice) and add to the pudding mixture.
Mix well and enjoy.
