Mugcake????How do I make it?

I have been looking through the different posts trying to find the instructions for this recipe. Can anyone help? Thanks Carol

Cadu 04-18-2012 05:57 AM

Here ya go carol.

1 pkg Chocolate Drink ( replace with other drinks try with vanilla drink)
1 egg white
1 teaspoon baking powder
1 tablespoon olive oil (I use 2 tsp)
1 teaspoon splenda (or sweeten with other sweetener to taste )
Splash of vanilla
Put the drink mix in a big mug Add enough water to bring it to a slightly watery pudding consistency, just enough to be able to mix easily Add other ingredients (egg white, baking powder, olive oil, splenda, vanilla ) Mix it like crazy with a big fork till it's silky smooth Put it in the microwave for 3 minutes ON TOP OF A BIG PLATE Watch as it expands like crazy Let cool

I put mine in a bowl so it doesnt run over.
enjoy!

carolirish 04-18-2012 06:52 AM

Great! Thanks Cadu.

wuv2bloved 04-18-2012 09:27 AM

When I made mine it POPPED out of the mug but some was left in the mug....it was crazy!.....lol

Mickeymom 04-18-2012 09:31 AM

I love the mugcake. It is very messy but a great treat.

Cadu 04-18-2012 09:53 AM

I put mine in a bowl so it isnt messy at all and I dont waste a drop of it. i just take the whole thing out and put it on a plate

Mickeymom 04-18-2012 10:03 AM

Gonna have to try that because i surely don't want to waste a drop either.

I know this is not an alternative thread, but Nashua Nutrition sells a cake mix like this....I mix it in a mug and eat it for lunch or breakfast as a packet sometimes. It is about 120 calories, 9 carbs (2 are fiber) and a couple grams of fat. This is very close the the mix you are making. It is quite yummy. A bunch of us at my work use this regularly.

When I am in a reboot (as I have been in maintenance almost a year)...I count this as a non-restrictive (but carb wise it is more restrictive) I only use this on high exercise days. (calorie wise it is more non-restrictive).

Is the plate to catch drippings? Do you use a plate with the bowl, too? How big of a bowl? The light has been out on my microwave for years, so I can't watch it. How will I know when it's done? (What should it look like?) Is it okay to open the door every minute or so to check it? Thanks!

carolirish 04-18-2012 03:20 PM

So. I made the mugcake. It really expands and is a substantial amount to eat. But, I think I left it in too long. It was a bit rubbery, I was able to eat it in my hand like a piece of cake. Is this the desired consistency or should it be more gooey. Smelled great and is a very much a comfort food. I will definitely make this again I need to experiment with my microwave. Tasted good.

Andie0606 04-18-2012 03:23 PM

Anyone try it with a pudding mix?

I'm wondering if this cake could be made with a pudding mix or maybe 1/2 a pudding mix? Anyone ever try that?

Sccrkeepr 04-18-2012 05:40 PM

Also, as an alternative (i know wrong thread) nashua nutrition sells a chocolate chip sweet roll, that is amazing and unrestricted.

Yes, the plate is to catch the spillage, I use an ice cream bowl and I dont need the plate. I micro it for 3 mins, not opening the micro and it comes out perfect every time. after it is done and shrinks it is about 1/3 of the bowl. (as it it cooking it comes way over the bowl but it shrinks back down onto the bowl when it is done).

not gooey, it comes out just like cake. I put WF choc or strawberry syrup on it.

Darbs, this would be a restrictive yes?

It doesn't work the same with the pudding packets.

wendyquilts 04-18-2012 10:53 PM

This is also pretty tasty with a little WF caramel dip on top.

swimcoachmomma 04-18-2012 10:58 PM

Real time update. Just made it with a cappuccino drink mix packet. Used a small glass mixing bowl. Served warm with dollop of WF chocolate dip on top. Yummy.

I have never tried it, but I am pretty sure I read more than once that pudding did not work- not sure about 1/2 and 1/2 though!

i add about a 1/2 tbsp of vanilla to the mix. I cook it for 12 minutes on 400 and it really is good. I probably would eat it off the diet too. I hope you enjoy it!:carrot:

That sounds good. I will have to try it with cappuccino. Never thought of that.
I like it a little less cooked so I stop the microwave just as it starts to falls over. So 3 minutes is too long for me. I do use less oil too.

My old boss was on Nutrisystem (I think) a few years back and had some mug cake packets he didn't want. I remember really liking them, so I was happy when I noticed this thread! Wasn't sure exactly what kind of drink mix to use, but I mixed half a scoop of no-sugar-added chocolate protein powder with half a no-sugar-added hot chocolate packet, and also added a little plain cocoa with a small amount of finely chopped walnuts.

Sure hits the spot if I'm craving cake! I sliced it in half last night, saving the other half for today. :)

sanaroph 04-20-2012 12:03 PM

:D oohh may try this tonight for my 'dessert'

sanaroph 04-20-2012 09:32 PM

Thank you for the recipe! It was yummy

Lorislosinit 04-20-2012 10:54 PM

This sounds delicious! I've been looking for a sweet treat.

Elladorine 04-21-2012 07:28 PM

I tried this again today. Last time it had huge air bubbles, so I decided to use my Magic Bullet to mix it. That seemed to do the trick! I only nuked it for 2 1/2 minutes this time as well, and the texture turned out a lot better for me (every microwave is different of course).

I forgot to add the olive oil! Turned out fine though. :) I also added a little squirt of sugar-free Hershey's chocolate syrup and extra Truvia. I also added half a teaspoon of finely chopped walnuts and half a teaspoon of finely chopped pecans, and the texture of them were blended away by the bullet.

Here's a photo; I topped it with a little more of the Hershey syrup and a few more walnuts. :)

I've sliced it into six pieces and plan on savoring for the next couple of days. Turned out extra yummy this time! :D

Oh, sorry about that! I don't normally wander into this section and don't know anything about the diet given here, but the Mug Cake topic caught my eye and the mods I've done work within my personal limits. :)

drakegirl 04-22-2012 09:55 PM

Tried it tonight - what a great treat! Thanks!!

karikitten 04-23-2012 08:57 PM

newbie around here :)

Will be doing my 3rd weigh-in on Wednesday, down 11 pounds so far.

I want to make this mug cake, but I get a little anal over amounts of stuff. Of course the packet is a packet, oil and i assume the baking stuff is 'free', but do we count the egg white and if so how?

Thanks so much, hope to get a lot more ideas around here :)

SewingMomma 04-25-2012 01:39 PM

I'm not one for making stuff with my packets, but I tried this one. OMG. It's so good!!!! I forgot to add the splenda packet, but I liked it just fine without. I usually buy the RTDs but I had a packet of chocolate drink mix on hand. I'm going to use some of the drink mixes that I don't love to make mug cakes. Oh, I also found some vanilla powder at my grocery store. It's basically ground up vanilla beans and has no added sugar or alcohol. Yippee!!!

Hi
We are allowed 2 free egg whites per day.

Fine line....as calorie wise no-restrictive and carb-wise in between restricted and non....sometimes I have it and count it as non...if it is a high exercise day...and of course...I am out of the original weight loss phase and I only have it as part of my "reboots".

Tried that chocolate chip sweet roll (non-restricted)...super duper yummy

Also looked at my chocolate cakes from NN....one brand is only 120 calories and 9 carbs, but 3 of those are fiber so 6 net carbs...that would be non-restricted.

Honestly can't wait to order more of thoses chocolate chip rolls...you bake in the oven and they blow up like a bisquit....very yummy

mlucas 04-26-2012 12:10 PM
