Mug cake
 
Does anyone have the recipe for making mug cakes? Since it's the weekend my coach doesn't check email and technically it's not an emergency type thing so I don't want to text her. I know there are a couple recipes using the pudding and drink mixes. Any help would be great! Thank you!

Mug Cake Recipe
 
This is the one I could find... it was not that easy, either... so I have given my post a title identifying the recipe name, and I will post it in the IP Recipes Thread that is open for new postings. Maybe it will be easier to find in the future.

I have not tried this, but it sure looks interesting!

Chocolate Cake in a Mug

Ingredients:
•1 package of Ideal Protein chocolate drink mix
•1 egg white
•1 tsp baking powder
•1 tsp grapeseed oil
•1/2 stevia packet
•A dash of vanilla
•1 tbsp. Walden Farms syrup (raspberry, caramel, or chocolate)

(serves one)

Instructions:

Pour the chocolate drink mix into a large microwave safe mug. Add enough water to bring to a slightly watery pudding consistency. Add egg white, baking powder, olive oil, stevia and vanilla while mixing vigorously until silky smooth. Place the mug in the microwave for three minutes on top of another plate. Carefully remove the mug from the microwave, drizzle with your Walden Farms syrup of choice, and enjoy!

Warning: Watch this carefully once you put it in the microwave. I used this recipe once and most of the batter ended up all over the inside of the microwave.

Thanks for the heads up on that, Catlady! I found and posted this but I have not tried this recipe... it looks so much like the muffin recipe to me, that I just go for making packet muffins using a muffin tin....

The cakes will get VERY large while baking, and will deflate when cooling. If you put too much batter into a small baking dish, your cakes will literally explode in the oven. It is VERY important to only fill the baking dish or muffin tin 1/2 way. Which is why you will get 2 small cakes or 3 muffins.

-Bake at 350 for 15-16 minutes. Let cool and enjoy a mini cake.

(2) notes:
1). I have only tried this with Lemon, Butterscotch and Vanilla puddings. They have all turned out excellect! I haven't tried with Chocolate because I don't really care for the chocolate pudding, it is very chalky to me.
2). If you are making the cakes in a muffin tin, fill the empty muffin "holes" with water so that the cakes bake evenly.

I found this recipe when I was looking around for something to do with a packet of Dark Chocolate pudding mix that I grabbed by accident. Looks great! Looking forward to trying it. Thank you!

Unfortunately strawberries, bananas, and almond milk are not allowed on the Ideal Protein diet.
