Should I tell him I am done? or wait out the 3 weeks? I am getting burnt out on the diet and having to go weigh in all the time, I know what to do and what not to do so why do I have to continue going in? Do your clinics make you do this?

What do you mean by "getting burnt out on the diet"?
Maybe they just want to track your weight loss for their records. In phase 4 you sure don't have to buy the packets. Can you negotiate going in every other week?
Or, just tell him you're not available. Remember you're paying him; he's neither the school principal nor the prison warden. You can say you're done, when you say you're done. Besides, what's he going to do, kick you out of the clinic and the program?
