Default How to cook Tilapia?

I haven't been a fish person, but I read that Tilapia doesn't have a fishy flavor so I picked some up. I know there are recipes here, but I wanted to ask for any tips or favorite ways to cook Tilapia.

I love baked Tilapia. I sprinkle it with seasonings. Usually sea salt and lemon pepper. Sometimes I use cajun spices. Somtimes I use garlic, sea salt, dried onions and cayanne pepper. No special recipe, I just bake at 350-375 until it flakes easily with a fork.

I love tilapia. My friend who owns a thai restaurant makes an awesome tilapia dish. Unfortunately it's a closely-guarded family recipe.

I pan fry it (just a spray of pam) with some old bay seasoning so that the edges are golden and crispy and it flakes easily!

I have a recipe for asian tilapia that is wonderful - this is for 4 so adjust accordingly.
4 - 6 oz filets
1 Tablespoon of fresh ginger - grated
1/4 cup of soy sauce
2 tablespoons sesame oil
1 bunch scallions ( I'm from Louisiana - we use chopped green onion) your choice
1/4 teaspoon black pepper

preheat oven to 425, place each filet on its own piece of aluminum foil - about 10 x 10. Combine all ingredients except for shallots in small mixing bowl, then spoon evenly on top of each filet. Add scallions then close foil securely. Place in baking dish into oven. Bake 10-12 minutes. It's is yummy!
I eat it at least once a week!

Ooh, thiss sounds like it might be similar to my friend's recipe, though her's also has bell pepper slices, cilantro, and lemongrass, and some type of red chile paste coloring the sauce red (the only clue my friend will give me is that there are no tomatoes in it). I think there's also tamarind.

I keep telling her she needs to market her sauce, because it's so awesome.
