  • Its summer time and I really enjoy using my grill to cook. Lately I've been making alot of hobo dinners. Basically meat and veggies put in foil together with olive oil and any spices.

    A few of my favorites are below.

    Cod with chopped up Kale, Celery, and Bell pepper. Added olive oil and season to taste. Throw on the grill until the veggies are tender. For this I added some lemon pepper seasoning and some chilli powder. Came out really well, the veggies soak up alot of the seasoning and stem into the fish. Its fantastic.

    I have also done chicken with zucchinni, asparagus, and celery, some minced garlic, and minced onions. Same seasonings as above. It was wonderful too.

    I enjoy spicy food so I have been adding a little hot sauce to them after cook which kicks up the flavor a bit.

    You can do this with any combination you like. I plan to try it out anytime I can. Its a delicious flavorful way to enjoy your meal/meals.

    As a side note for about 3 years now I have had very bad heart burn and acid reflux. To the point I went to the doctor because I thought something was wrong with my heart. They told me it was acid reflux and that I should just take something over the counter for it. This worked for a bit but not long and I went back and got something prescription strength. That helped for a little bit but it was back before long. I haven't been able to eat anything with even the hint of spice for that time without paying for it later. Even bland foods where causing me fairly intense pain. Since I started IP I have not had any issues with this and have been making a lot of spicy dishes.

    That's wonderful that your acid reflux is improving and you are able to eat those spices you so enjoy...congrats! I love the way we are seeing so many health symptoms improve while following the protocol.

  • I was just thinking about hobo meals the other day, so I'm looking forward to making some soon. Awesome about the heartburn! I was eating Tums every night for heartburn befor starting IP and haven't needed any since starting either. This diet is awesome in so many ways!
  • I've been marinating chicken in soy sauce, grape seed oil, ginger, red pepper paste & splenda and then kababing it with green onions and peppers...I've had that like 3 times this week
  • For a little spice, I have been roasting my cauliflower and coating it in cayenne. Really good.

    Oh that sounds wonderful....think I'll be trying that this weekend!
  • Ya I just cut up chunks of chicken and throw it in a container and let it marinade anywhere from an hour to overnight...it's delicious! Sometimes I add zucchini and other veggies too.

  • Oooo...I used to make hobo's all the time and totally forgot about them. Thanks for the reminder! We grill out a lot and it would be good to switch things up a bit.

    Besides being yummy, it's a great idea for a family. I can make their packets with veggies I don't eat, and mine with ones I do!

    Too funny! The very first night I started IP I went to reach for the tums bottle right before bed. I stopped at first to analyze the contents. As I stood there in a small panic wondering whether or not I could take them, as I have nightly for a very long time, I realized that I did not even need it! I have not gone back to the bottle since.

  • I love all things spicy, so I regularly check the shelves at any grocery store I visit looking for another hot sauce twist. Since I'm not a huge fan of the WF salad dressings, I make my own -- always with some tabasco, tapatio, or cholula to kick it into gear.

    For a hobo dinner, try a ground turkey patty with zucchini, leeks, fresh herbs, garlic, seasoning and a whole anaheim pepper, seeds and all. Anaheim's are mild, so they won't overpower the turkey. I leave the seeds in because an anaheim without the seeds has as much potency as a green bell pepper. If you need more kick, pick up a bottle of habanero mustard to use as a dipping sauce.

    OMG I thought I was imagining things! I've had acid reflux since I was 13, and a little over a year ago I was diagnosed with something called gastroparesis which is basically a paralysis of your stomach. Very painful. Since I started IP I haven't had a problem with either. I've even stopped taking my proton pump inhibitor and I feel completely fine! Hurray for IP!!!
