Salsa chicken

Take a boneless chicken breast--one per person (and it can be frozen) and place on pan with sides (like a jelly roll pan)--spray with Pam first
cover with 2-4 T salsa
Bake at 350 for about 30 minutes
Take out and put 2 T shredded cheese on top and place in oven until cheese melts
Serve with salad or steamed broccoli

Bargoo, that recipe was in the South Beach Recipe file for ages before I tried it. Now it's a favourite.

Yes, Ruth. That's where I got it. I absolutely love it! Tasty and oh, so easy and way low in fat and calories (especially if you use low fat cheese).

I haven't seen this, but it sounds yummy.

Quick dinner idea

Frozen cooked shrimp (or leftover cooked chicken, pork, etc.)
chopped up garlic in a jar (optional)
chopped up ginger in a jar (optional)
onion - optional
pepper - optional
olive oil (can add sesame oil if you have it)
coleslaw mix
soy sauce (optional)
peanuts chopped up or a tsp peanut butter (optional)
Quick cooking brown rice in a bag (optional)

put the amount of shrimp you want to thaw in running cold water (in a bowl or colander)
Follow instructions for rice and put in microwave (mine calls for a quart of water and 10 minutes)
Put olive oil in a pan and heat
Cut up an onion and/or pepper if you have them and if you have time to cut them up. Add to pan.
Add garlic and/or ginger if you have it.
Add coleslaw mix (and onions and peppers) to the pan and stir until wilted.
Drain shrimp once it has thawed - minutes.
Add shrimp to pan and stir to heat through. Remove from heat as soon as food is warmed through.
Add soy sauce, peanuts, peanut butter (optional)

So this can be as simple as shrimp and cabbage stir fried and as elaborate as a 3 veggies and shrimp stir fried with a tasty ginger/garlic/peanut/soy sauce on brown rice. You can also add red pepper flakes if you like it spicy. Can take as little as ten minutes.

Chicken Tortilla Soup Recipe

Saute sliced carrots, celery, onion in olive oil
add 1 can Rotelle diced tomatoes with lime and cilantro
add 3 to 4 cups of chicken broth
add 2 - 3 chicken breasts simmer about 20 minutes or until chicken is cooked
remove chicken, shread it, and put it back into pot

serve soup garnished with fresh chopped cilantro and tortilla strips/chips

You can use a rotisserie chicken if you like. When I do, I add it about 5 minutes before serving.

Operators just got up from an unscheduduled nap. I love weather delays!!!! You people would be amazed at the weird positions I can get into on this haul truck. Laid out across the console with my head IN my lunchbag, one foot caught in the steering wheel, the other wedged between the seat and the door. Thank heavens I woke up about five minutes before they opened the road. If one of these freaks would have had to wake me up, that picture would have been on every cell phone in the mine by the time I got on the bus out at the end of shift. Drool and all!

Scuse me now. I gotta rub the thermos imprint outta my face and clean my truck before shift change.

Trying to picture all of that Operator. How on Earth did you get your head in your lunch bag? That is the only part that miffles me, I can understand the other parts, just not the lunchbag. :dizzy:

Ruth Rotel's varieties of tomatoes and chilies are pretty common here in California but you can use any brand of tomatoes and chilies combination. The one with the lime and cilantro just goes well with her soup, not many ingredients in the soup (which is how we like it - simple). The lime/cilantro adds that extra kick. She does put zucchini in it sometimes too.

As far as OPERATOR wearing garlic....I dunno....but the rumor I am spreading is....her breath, from sleeping in her truck, could blow things up...;)

Operator, did you get some of this storm that's going through Colorado right now? We had rain overnight... a lot of rain! My hubby's uptight because now we have puddles all over out here (I live out in the country). Makes it hard to feed the animals when you have to wade through the mud and water puddles!

OK, let's see. I put my coat across the center console so I wouldn't get switches jammed into my ribs, and laid my head against my lunchbag as a kinda pillow/prop type thingy, then curled my legs up on the driver's seat in the fetal position(musta gone "breach" in my sleep). How did my head wind up IN my lunchbag you ask. Well, I dunno.:dunno: I was asleep when that happened. :faint:

Slash-Gotta little rain. That's what messed up the haul roads last night. Doesn't look too bad so far. I had to take my coat off on the way home. But, I'm from WY. If the wind ain't blowing, it just ain't cold. Don't matter what the temp is.:D

Seems he didn't think 8 hrs was enough distance between us for the next time he ticks me off.:devil: Specially since they're WY miles and I can do them in 3.5 when I gets me hackles up.:s:

I've got about six of those little listerine keyring sprayers all over the place. 2 in lunchbag, 1 in work coat, 1 hidden on haul truck, 1 in pants pocket and 1 in car. Plus, a bottle of White Shoulders. I can't stand getting on the bus after work and sitting next to some stanky miner after a 12 hr shift. And it is always the guy with the worst breath that likes to talk right up in your face.:barf:

Thanks for all the dinner ideas! Unfortunately my bf had ordered pizza when I got home and I gave in. I definetely plan on trying the chicken tonight though!

Thanks Y'all. Just trying to find balance with home and new job. Lady I am aiding has absentee hubby and daughter has own life. Lady does not have enough people hired to do the job and now is asking me for more than I am able to commit. But I am sad, when she says that she does not want to live, angery that her family does not put her as priority. And my family has been spoilt with me being home full time for 8 years. They are struggling with me being gone 3 hrs here and there thru the day and most of the weekend etc. Just keep up the funnys then I will have something to look foward too! And that is the end of my downer post!
