Mmm. Alton Brown has a great recipe for fried mac-n-cheese.
Basically you take day old mac that's been refrigerated - so it's firm - and cut it into cubes. Then dip it in egg, dip it in breadcrumbs (I've used panko before to get the most crunch), and fry it.
I've made it twice and it's heaven on a plate.
Of course it's also 10 ba-jillion calories, so it's not something I make or eat every day.
