Mixed berry salad (strawberries/raspberries/blueberries/blackberries) with some kind of cream topping. I made that once for a similar-sized gathering and it was GONE in 30 seconds. It's a bit pricey since berries are pretty expensive, but it is delicious.

I just posted this in my WOW challenge group! There's nothing 4th of July about it, but it is light and YUMMY...it's similar in a way to the recipe CandyKisses posted....

Makeover Toffee Crunch dessert....(Taste of Home, Light & Tasty, July 2006) I've made this dessert a zillion times!


1 1/2 cups cold FF milk
1 package SF instant vanilla pudding mix
2 cartons (8 oz each) frozen FF whipped topping, thawed (Cool Whip)
1 prepared angel food cake (16 ounces), cubed
4 Butterfinger candy bars (2.1 oz each) crushed

In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Stir in 2 cups whipped topping. Fold in remaining whipped topping.

In a 13 x 9 inch dish coated with non stick cooking spray, layer half the cake cubes, pudding mixture, and crushed candy bars. Repeat layers. Cover and refrigerate at least 2 hrs before serving.

Nutritional facts....3/4 cup = 219 calories
3 g fat (2 g saturated fat)
1 mg cholesterol
366 mg sodium
41 carbs (sorry Aud and any other low carbers)
1 g fiber
5 g protein
Diabetic exchanges...2.5 starches, 1/2 fat

OOPS! She made a "healthy" apple-berry crisp and pineapple zucchini bread....both very good.

For today's BBQ it's SMORES over the firepit...one of our traditions!

tamaralynn....I made the Ambrosia and it had a divine taste. I thought it was not as thick as I would have liked, and I did drain the fruit well. It was eaten, so I must have been the only one who thought it didn't set up well. :)

I will definitely try it with other fruits as well.

I also made this for the 4th. It was very good, I just wished it would have set up more, too. :D

Oh good aphil, at least I know it wasn't something I did wrong. Sure couldn't imagine doing anything wrong since it is such an easy recipe. Like I said it got eaten..was very tasty.
