I just re-read Angie's recipe ~ don't forget to CHOP the bacon into little pieces! Which means it always ends up at the bottom of the bowl after mixing...but...the sport is in getting it onto your plate.
If you have cherry tomatoes too, I'm enjoying the heck out of this right now, and it has like NO calories:
Cherry Tomato Salad
1 quart cherry tomatoes
1/4 c. fresh basil, finely chopped
1/4 c. green onion, sliced
1 clove garlic
salt and pepper to taste
Halve the tomatoes. Stir together with basil, onion, garlic. Add salt and/or pepper either now or later. Wait at least 30 minutes before eating so flavor can develop.
Sometimes very simple things taste very wonderful! I don't even notice that oil or vinegar is "missing" because the fresh taste of the tomatoes and herbs is so amazing.
