Those are good basics to start out with. Something I love is to slice a portabello mushroom and a small zucchini, then saute them and stir in pasta sauce. Serve over the whole grain pasta. It's a delicious way to get your veggies, and super quick and easy.
I like to cook a whole pot of brown rice, then package it in half cup servings in baggies, and freeze it. It's really easy to pull a pack out of the freezer and add it to stir fry or whatever else you want to do with it.
Another easy meal is canned vegetable soup (read the labels and choose the healthiest kind) and a half of a sandwich on whole wheat bread. It's very satisfying and balanced.
