I had bought some tilapia fillets from the store the other day and I didn't just want fish, so I put all of this stuff in a bowl and tossed it into a aluminum foil baggie! It was soooo good I wanted to share!!
2 Tilapia fillets
1 TBL flour
1 TBL olive oil
1 small tomato diced
1 tsp minced garlic
1 TBL low cal tartar sauce
½ cup green onions
½ lemon juiced
Dash salt & pepper
Make a pocket out of foil (make it big)
Add the flour (keeps it from exploding) and set the tilapia fillets on top of flour
Mix olive oil, garlic, tartar sauce & lemon juice until smooth.
Add the tomato & green onion and spoon into the bag on top of the fillets.
Dash salt and pepper on top of fillets.
Bake in 450 degree oven for 15 minutes.
I can't believe how good this recipe is & I only created it out of stuff I was going to throw away because it had gotten pretty close to trash time!!

Sometimes I just bake it as is. But if I want it crispy (because I really miss fried fish) I use the boxed "fish fry" stuff from the seafood dept. It's called "oven fry" for fish. I coat the fish with egg substitute first, then put a very light coating of the oven fry on it, then bake it in the oven until crispy.
I eat fish often. I also love mahi mahi and catfish.
My family also loves talipia. The way I fix it, and it is really good is to take out however many talipia filets you need and marinade them for at least 4 hours or overnight in LOWFAT Italian salad dressing. The next day (or that evening) I place a piece of tinfoil on a baking sheet. Place the fish on the baking sheet and bake at 350degrees for 20-25 minutes until it flakes easily with a fork. I also usually sprinkle my fish lightly with either cajun seasoning or Old Bay seafood seasoning before baking. The result is delicious fish!!!
Oh, that sounds yummy, I'll have to try that. I've got plenty of tilapia in my freezer, maybe I'll have that for lunch on Monday. And I love that Old Bay seasoning.

Since the tilapia is such a thin fish, you don't actually have to thaw it out before placing it in the salad dressing. Often, I put the frozen fish in my Tupperware container the night before, and place it in the refrig, and it is completely thawed out and ready to bake whenever the next day.
I sure hope you like it! It is one of our favorite ways of fixing tilapia!
