    Frozen Grapes

    Celery with Laughing Cow Cheese (reduced kind)

    Low Carb Muffin (1 slice) with 2% kraft cheese (melt in microwave)

    Can of Asparagus tips (love these)

    Plate of cooked mushrooms (not sauteed in butter)

    Can of black olives (occassionally)

    Low Carb Tortilla with shredded turkey breast, bell pepper strips (any other veggies), brush with your favorite spread (very lightly) such as low fat cream cheese).
  • Egg In a Hole
    One of my favorite "quickie" meals for breakfast or a light meal is Egg in a Hole. Melt 1 tbsp. of Smart Balance (47 calories) or other low fat (not non-fat) spread in frying pan. Poke or cut a hole (I use a 1-1/2" cookie cutter) in middle of slice of whole grain bread (79 calories) and crack a large egg (74 calories) into the "hole".

    Let it cook for a couple of minutes on medium to high heat and flip over. Cook another minute or two, depending on how "done" you like your eggs. Total of 200 calories. You can save some calories by using less cooking fat, small egg and reduced calorie bread. Cooking time - less than 5 min.
  • I like stuffing things in toasted pita bread....

    My latest: 30 seconds per side of a frozen garnenburger in the microwave on a small plate. Cut it into little pieces and mix in 1/2 cup of egg substitute. Cook in the wave a total of 2 more minutes, stirring halfway. Spread a laughing cow cheese wedge into the pita (half in each side) and then add half of the egg to each side. YUM!!!! Keeps me really full and it only takes 5 minutes in the morning before work. It's hot and fast and I just throw the plate in the dishwasher before I head out the door. Voila.

    I've never tried the gardenburger. I've been afraid to try it. Burger without meat just doesn't sound right..lol.

    fat free yogurt with granola.

  • Additions to Popcorn
    I put parmasan cheese on my popcorn. I don't like the butterless and although this adds some fat, it helps with the taste for me. What else do you guys put on popcorn besides butter?
  • Smoothies and More
    SMOOTHIES!!! I was paying bucks for these at a smoothie shop and when I learned to make them at home, I never went back. Fat Free Yougurt, Frozen fruits, ice (if you have to), splenda and set that blender whirring. The key is to buy cut up stuff or frozen stuff to avoid all the time chopping. Careful on the frozen stuff because it tends to have too much sugar.

    Diet, Calcium enriched hot chocolate!

    Oatmeal with brown sugar (skip the butter and milk)

    Hot Tea (I like sleepytime tea)

    Grapefruit (with cinnamon on it) (try it)
  • Hmmm, the grapefruit with cinnamon sounds good. I personnaly like celery sticks with salsa. I get the salsa taste but no corn chips!

    1 Chocolate fat free pudding - 60 calories
    Fat free cool whip

    Heat the Vitamuffin up in the microwave until warm, then pour the pudding over top of it. Top with cool whip, and it's SO good.

    With 4 tablespoons of cool whip (which is a lot to me) and it was only 190 calories.

    1 Apple cut into pieces
    1 teaspoon cinnamon (you can use more or less, to taste)
    1 or 2 tablespoon sugar free maple syrup

    -Take the cut apple pieces and lay them with the peel down on a plate
    -Sprinkle the cinnamon on all of the pieces evenly

    Microwave until the apples are warm/hot, then drizzle the maple syrup on top. You can even add some cool whip to make it extra good.


    They both only take about 1 minute to make.

  • I get Vitamuffins at my local supermarket (which is Stop & Shop, or Foodtown) so they should be available most places. They're in the fridge section. I've only found the chocolate ones there, they also have them at some health food stores in more flavors. Or you can get them online on their website, which is better if you want to buy in bulk.
