Default My latest breakfast-pita concoction...

I like to eat my breakfast stuffed in a pita so that I can eat half right away, and then half once I'm at work and finished the morning report a few hours later. Here's the latest -- I made it up when I ran out of salsa for my previous pita pileup.

1 Original Gardenburger patty, frozen (or substitute whatever brand/flavor you like)
1 Whole wheat pite -- I use Kangeroo Brand, medium sized
.5 cup Fake Eggs -- I use Better'n Eggs
1 Laughing Cow Light Swiss Cheese wedge

- Cut pita in half, toast both halves
- On a small plate, microwave the gardenburger for 35 seconds on each side (or until done)
- Cut teh gardenburger up into little pieces and distribute on the plate
- Spray plate (over the burger) with non-stick spray
- Pour egg-beaters over the burger pieces
- Cook in microwave about 2 minutes, or until done
- Spread the cheese wedge half into each pita half
- Add in half of the gardenurger 'omlette' unto each pita.
ENJOY!

355-362 calories, 51% carb (46g), 15% fat (6g), 34% protein (31g) for the ENTIRE THING.

I like to toast the pita halves first so that they have time to cool before I add the cheese to it, I think it spreads better (and doesn't 'soak in') when the bread isn't so hot.
You might also be able to mix up the eggs/burger so that it's more of a scramble, but then it might fall out of the pita and not travel as well.
Try adding different spices to the eggs first, to give new tastes!
