What I personally like to do is breakdown and buy the high-end balsamics (which have the price tag to match!). But since they are such high quality you only need to drizzle this right over your salad.
However, if that isn't your style, here are some other recipes for you to experiment with:
Balsamic Dressing
from Susan Powter's Recipes
3/4 c water
1/4 c balsamic vinegar
3 tsp. capers
2 tsp. Dijon mustard
1-1/2 tsp. dried basil
1 Tbl. fresh parsley, chopped (optional)
Combine the ingredients. Adjust vinegar to taste, since it has a stong flavor. Store in a covered container in the refrigerator.
Makes 1 cup
