I wanted to say thank you for the mac n cheese recipe from one of the other threads. I made it and its baking now. I'm thrilled to have a healthier mac n cheese recipe! Serving it tonight, so fingers crossed it goes over well with hubby and kids. I tried a bit before putting it in the oven and I already know I like it
I don't have it right in front of me right now. I boiled a big head of cauliflower until soft, added that and about a cup of the water to the food processer and I ended up using 3 cups of fat free cheddar and pureed. Also seasoned with mustard, salt and pepper. Then poured over pasta and baked for 30 mins.
I used ff cheese because I am having some pretty troublesome gallbladder issues and at this point can't go in for surgery until I have the baby. I think low fat or regular cheese would have been a bit better. But it was good. Everyone but my middle ate it, but my middle son basically live on peanut butter sandwiches right now. He idd try it though so that was a miracle. lol

YAY!! My daughter tells me that the cauliflower cheese is her favorite, and she's 7. She hates when I don't have it on hand and have to resort to the regular (roux, skim milk).
Try the nuggets next - I swear, they're so awesome
