Avocados
 
I am loving avocados, and am looking for new ways of incorporating them into meals.

So far I spread 1/4 of a ripe one on my english muffin/egg breakfast sandwich.
Today, I mixed some in with 1/2 a serving of spinach vermicelli, chicken and veggies for lunch, I added a little garlic and salt and pepper, and it was great.

I'm looking for other ideas. I found a recipe online for vegan creamy avocado pasta sauce. I know it is fatty, but it is a good fat, and I don't eat much in the way of fat otherwise.

Yum, I adore avocado.

I've heard of avocado and tuna as part of a sandwich or pita.
Chunks of avocado on a salad.
Avocado in a smoothie.
Avocado & cucumber sushi (if you like to make sushi) or in a fresh spring roll

I made the Southwestern black bean salad from Skinnytaste the other day. It has avocado in it and is delicious.

Yum! :hungry: I found another recipe on the same website you posted for DIY american cheese like velveeta or cheese slices. This will be great for the boyfriend for some of his faves and cheaper too! Thank you!

I saw that one too! I want to try it because I love american cheese :) It's in my recipe bookmarks. You might want to poke around their recipe tag...I've seen other yummy things (some unhealthy though, but still yummy :lol:)

Consequently I think I'm going to bookmark this entire thread. Sooo many wonderful avocado ideas!

I just remembered this - a friend of mine lightens up her guacamole by adding in mashed cooked edamame. She calls it "edamole" ;)

Riddy- Cooked edamames sounds interesting! Recently I was looking for ways to sorta bulk up my guacamole batches (but still keep the yummy flavor) because sometimes you don't get enough from 1-3 if you want to make a lot for a party or whatever.

Anyway, I came across a few recipes which included adding pureed white beans with lime mixed into it, thawed spring peas?!? or greek yogurt. I like the white bean or greek yogurt idea but peas? I don't know. Maybe a 50-50 mixture of white bean/pea or yogurt/pea would be good.
