Default Zucchini - What To Do With It?

Help - my husband brought home a foot long Zucchini - I have
never cooked one. Not sure what to do with it. Any ideas would
be appreciated... I have looked up a few receipes but still not
sure what to do with so much of it.

Zucchini: steam, stir fry, roast, fry, deep fry, saute' - Forget the deep fry You can pan fry with Pam (Garlic flavored, butter flavor or whatever). Put alittle salt and pepper on it. Mix it with other veggies or roll in bread crumbs and roast. Zucchini usually picks up the flavor of what it is cooked with. Slice some up and place in oven with your roaster. Zucchini is a bland veggie and can be eaten in every way imaginable. Mix it in stirfry and serve with your fav. dish. Hope I was of help.

Muffins are bread would freeze well.

Also great in oriental stir frys. MMMM

Slice your zucchini into coins, dip into egg whites then dip into salted flour, shake excess flour off. Place onto a pan sprayed lightly with Pam.

Bake @ 400 degrees for approx. 1 hour, turning at half time (watch for burning)

Taste just like deep fried ones.

These would probably taste even better if you had a lowfat dip, maybe a ranch or something similar.

You can also shredd and then freeze for later use in muffins etc.
