Yes, you can eat both zucchini and asparagus raw. I love raw asparagus but I can't stomach raw zucchini (I can barely eat it cooked, unless it is well disguised). Unfortunately, asparagus season is pretty much over now, so it's going to be hard to find at a reasonable price.
If your asparagus is woody, use a vegetable peeler to peel the lower half. Once the tough skin is peeled away, it will be perfectly tender. Fennel bulb (sometimes referred to as anise) is awesome raw or cooked. It is similar to celery but it doesn't have the strings and it has a much stronger flavor with a hint of licorice (which sounds strange in a veggie but don't knock it 'til you've tried it). I love raw fennel diced in salads. Corn fresh off the cob (which will be in season soon) is also good raw. You can mix it with other veggies (peppers, cucumber, radishes, whatever) and a little salsa to make a nice summer, lettuce-free salad. I also love raw button mushrooms if they are very white and firm. If they are starting to look brown and soft, they're better cooked. |
wow~! thanks for the info :) The Fennel bulb sounds really good, I love celery... so I'm going to have to try that. haha XD I also didn't know corn could be eaten raw....... looks like i've learned something new :D thanks again~!
