Question Squish Squash

Hello. I am now heading for day 4 of Phase 1. Is Spaghetti squash and butternut squash okay in Phase 1? They are veggies but I want to make sure before I devour them.

He suggests any vegetable and fruit except white potatoes or avocados, so they are allowed I'd be careful about portion sizes, though, since they can add up pretty quickly, unlike some other vegetables.

Question for you on squash. Since I started Smashing, I've been really open to trying new veggies! I'd love to try squash, but I'm not sure how to fix it, or what kinds to look for. I'm open to suggestions from you guys on what kinds of squash are good (and you'd better be really descriptive on what to look for - newby here!!!) and how to fix 'em!

I found a squash site that shows pictures of many squash and what to look for when you go the the store. (I thought it would be a nice visual for you )My favorites are Butternut, Spaghetti and Acorn. For Spaghetti squash tonight I am going to mix some Italian spices in with tomatoes and serve over the squash...yum!

Hey, thanks, Shellerooskie. That site is fantastic! I'm going to print it out and give a few of those preparation suggestions a shot. And that picture is a great reference. I'm going to take that with me to the grocery store! No more guessing!!!

Butternut is my fave. It's a beige color, round bottom and long fat neck. Pierce it 4 or 5 times, microwave about 10 minutes, cut it open remove the seeds, cover and cook about 5 minutes more until it's soft. A yummy way to fix it is to cut it into 3 inch pieces (skin included) and whir it up in a blender with broth, a little salt and pepper. If you get a good one it will be sweet tasting.

I use the spaghetti squash as a noodle substitute. Great with tomato sauce.
