Dessert Recipe
YUMMY! So, we always end dinner with a dessert, usually fruits, yogurt, on occasion ice cream for the kids. Tonight, I wanted something a bit "fancy", no reason, I just wanted the illusion I was eating something completely and totally decadent, without ingesting 2000 calories, yanno? So, I took:
2 cups fat free plain yogurt
2 Tbsp ground flax seed
1 orange
1 cup of frozen blueberries
1 Tbsp honey
Mix the yogurt and flaxseed together, spread in a pretty dish.
Peel the orange, arrange in a pretty pattern, spreading outward.
Use blueberries to garnish on edge of yogurt spread, and build a pretty centerpiece in the center of orange pieces. Drizzle lightly with honey.
OMG! This was FANTASTIC! And so yummy, the kids ate it up and it looked so pretty and rich and decadent, yanno? I kept telling Matt, I was looking for the crust to make a cut, it looked so much like a pie and it fooled my mind into thinking I was having something really really off plan, but it's totally on plan and it's SO tasty. I know some of y'all use flavoured yogurt and I bet this would be great with vanilla and you wouldnt need the honey for sweetness. Just thought I'd share.
