A nice loss is always motivating! One recipe I have enjoyed during Phase I is veggie soup. I get 3 cans of low sodium chicken broth and a huge bag of fresh frozen veggies. The veggies contain salt but I rinse them off and throw in the crock pot. I also add Lentils (ps - I HATE beans but lentils are actually pretty good), and brown rice. Fresh veggies are probably a better choice, but this is quick and easy. Takes less than 5 minutes to pop into the crockpot. This time a year a warm cup of soup really hits the spot for me! I also add low doium soy sauce to my rice. Putting it in the soup makes it even easier! Good for you on working out 8 days - that is great! Good luck!
