Default P1 - Brown Rice with Portabello Mushrooms and Balsamic Vinegar

I needed something with a lot of flavor, and started grabbing things from the pantry. I've made this a few times and enjoy it. You can mix things up as you want, substituting whatever vegetables you have on hand. Once I added a couple of chopped grape tomatoes to the onion and mushroom mixture and continued to cook over med-low heat until the tomatoes began to carmelize and it was delicious

1 tsp olive oil
1 portabello mushroom, chopped
1/4 cup chopped onions
2 sun-dried tomatoes, minced (rehydrated if using plain dried, or wipe away excess oil if using oil-packed)
1/4 tsp minced garlic
handful of chopped fresh spinach
1 cup cooked brown rice
a few dashes of dried basil, or finely minced fresh basil
balsamic vinegar to taste

Heat the oil in a nonstick skillet over medium heat. Add mushrooms and onions and stir until onions start to become translucent. Add the minced garlic and stir for another minute or so. Add basil, sun-dried tomatoes, and chopped fresh spinach. Stir until spinach begins to wilt. Add the cooked brown rice and stir well until heated through. Add balsamic vinegar to taste.

Yes, everything listed will fit in nicely with phase 1 You'll want to measure the oil and if you need more, make sure you count it towards your daily allowance. But if you use a good nonstick skillet and cook the veggies carefully, then 1 teaspoon should do it.

I'd love to hear what everyone else likes to add to their brown rice. I'll be small diced zucchini or yellow squash would be good.

Thanks for posting this. I followed the recipe pretty much...sauteed onions, garlic and basil. Then tossed in the portabella and zucchini. I sprinkle a little chicken bullion granules (not tons cause of sodium) add just a little water to get it going. Add a fresh tomato or two and then some tomato sauce and cook until it thickens a bit...at the end I pour in a bit of balsamic...yum. This is my new favorite. All served over brown rice.

Hi - I added sweetlets peas & niblets corn to my rice wih a dash of soy sauce.
Very yummy & filling

It's yummers! Our favorite so far! We added a can of salt-free diced tomatoes, corn and some green beans, since spinach is not an option right now.

We loved it!
