So I made this up last night, and it was delicious, so I thought I'd share. Keep in mind, this is for Phase 2 and up. If you want it on phase 1, omit the cheese and meat. You'll probably need to make the full 2 cups of rice in that case or use something else, like more vegetables or peppers.
1/2 packet Old El Paso taco seasoning
4 oz beef or chicken
1 cup brown rice
1 can corn (and/or any other vegetables you may want)
1 oz shredded low fat cheddar cheese (optional)
Brown beef in a pan (or bake chicken at 375 til cooked). Add 1/4 of the packet or seasoning while it's cooking. At the same time, make the rice in a separate pan. When the meat is done, either chop up the chicken into smaller pieces and put it in a skillet or just make sure the beef is in bite-size pieces. Add the corn to the skillet til warm, then add the rice and the rest of the seasonings. Cook til hot, then top with the cheese if you want.
I only ate half of this before I was full. It was also good when I re-heated it. The best thing about this is it's adaptable - it filled my craving for Mexican food but you can still add or subtract whatever you like.
