Default Sweet Potato Fries

SWEET POTATO FRIES
2 POUNDS sweet potatoes, peeled.
1 TABLESPOON olive oil
¼ TEASPOON salt
¼ teaspoon freshly ground pepper

Preheat oven to 450. Halve potatoes and cut into ½ inch wedge. Toss with the oil, salt and pepper in medium bowl.
Arrange the potatoes in a single layer on a nonstick baking sheet. Bake, turning once until browned and crisp - About 35-40 minutes. Serves 4.

This tastes great with plain yogurt mixed with a squirt of lime juice for a dip

How come mine always come out burnt and gross? Should I turn down the heat? Anyone else have this problem?
