P2 grilled asian style fish salad lettuce wraps
I was messing around in my kitchen one day and came up with this recipe it is soooooo good!! I made it the next day for my boyfriend and he said it was the best thing he’s ever eaten!
Ingredients:
1 piece of tilapia (I think our serving size is 6oz)
2-3 tsp of light soy sauce
1 ½ tbsp Cumin
1 ½ tbsp chilly powder
½ tsp garlic powder
dash of Ground nutmeg (I do mine fresh with a microplane)
tiny pinch of cinnamon
dash of cayenne pepper
2 tsp low fat mayonnaise
1 tsp mustard
¼ C Corn (I defrosted the freshly frozen kind)
4 grapes, chopped into little pieces
Ice Berg Lettuce
Pam Olive Oil Spray
Place the Tilapia and Soy Sauce in a Plastic Storage Bag and let marinade for 10-15 minutes. Preheat grill pan to medium heat. Mix together the cumin, chilly powder, garlic powder, nutmeg, cinnamon, and cayenne pepper and rub all over both sides of fish. Spray grill pan with a coating of pam olive oil cooking spray and cook fish about 4 minutes of each side until thoroughly cooked through (the fish will flake easily when fully cooked).
Let fish cool for 5-10 minutes
Once fish has cooled break into small chunks with your fingers into a bowl. Add the mayonnaise, mustard, corn, and grapes and stir until combined and looked like tuna or chicken salad. Spoon Mixture into lettuce leaves and eat as a wrap or eat plain
